This is a version of a classic salad that is seen at all celebrations. If you do poach a chicken, you can use the stock to make a delicious chicken-flavoured rice. Or you can use up leftover roast chicken or buy a cooked rotisserie chicken, then you won’t have to poach the chicken from scratch. Try swapping the sugar snap peas for carrots, papaya, daikon, courgettes or mangetouts.
